The release of 'ID Series' by Sawaya Matsumoto is a set of sake we look forward to every year. Truly a look at what "terroir" means in sake, this series uses rice grown on three different plots - with all other variables the same (yeast, polish rate, brewing method and conditions). And Grade A Yamadanishiki rice from Hyogo, no less!
